Yet Another LOR Question

At the risk of possibly beating a dead horse, I should point out that I did a search and couldn't find a thread answering a question similar to mine. I am a Canadian student who will be applying to American med schools.

One of my favourite instructors this year taught a class that I believe counts as a "science" class (Otology & Audiology). However, he is not on the permanent faculty at my university (University of Toronto). He is actually a clinical audiologist. He is also a researcher with the university, but he hasn't been granted official tenure (ie. the "professor" title). He was the instructor for the course though. It might sound like a silly question, but could I still use him to fulfill the "professor quota" of LORs? If need be, I could get it from other professors, but I know he would write me an especially strong one. Thank you in advance.
