I'm asking for a LOR from a professor who I didn't have a "class" with, but did independent research with. The research is listed on my transcript as "Protein Structure and Assembly" and was 6 credits total done over the course of two semesters(3 credits each semester). I even received a grade for this research. Do you think that this LOR would count as a science one?

Yes, sure! I also had an LOR from a professor I did research with. It counts since you spent a considerable amount of time with him/her. They (should) know something about you (academically).

Since you took the lab experience for credit, I think it should work.

I worked as a paid scientist at a lab, and I was told that a letters from the professors there would not fulfill my science LOR requirements.

It depends.....I had a similar case and at most schools it counted as a science LOR. However, if you are applying to Michigan, they will not accept it as a science LOR. They emailed me and said I needed an additional science LOR and that "research" doesn't count as science. So, I had to run to my organic chem professor and ask her if she would write one, Thank God she did!
