For example, say someone majors in Psych in undergrad but wants to go into Hem/Onc eventually. Will studying Psych in undergrad make summer research opportunities in medical school harder to get compared to someone that studied, say, Biochemistry in undergrad?

Nope. Your research opportunities are limited by who you know and what research is available in your area. Once you start med school, no one really cares what your undergrad major was.
