From what I have gather, one should volunteer at a minimum of two different places. A non-clinical/non-hospital based place, and a clinical/hospital based place. However does that mean you should also volunteer at multiple clinical, and non clinical places or just one of each long term?

You are over thinking this. Find a place you like and stick with it.

N=1, but I volunteered at 0 hospitals.

Volunteer with stuff you care about. Trying to fulfill a 'rule' of volunteering at X places doesn't set you up for success.
 
There is no "rule" here. Volunteering at different places with different settings is more beneficial to you as a person interested in becoming a physician than it is to you as an applicant to medical school. By volunteering in different settings, you will get a broader understanding of what medicine "is about" and can perhaps leverage those experiences when talking about why you want to be a physician, your interests, etc., but no one is going to be looking at your app to "make sure" that you spent time in multiple settings.
