Have always been curious about this: do grad school committees, etc. view adjunct prof letters of rec as equivalent to TT profs when considering the student for grad school, job opportunities, etc.? I'd love to hear from those who served on grad committees especially.

In the context of what other letters?
In my experience you want two strong, specific letters from faculty with direct experience working with you. Fewer people can do three core faculty with extensive experience so a third letter can be a bit more general or from someone whose experience with you was more broad.
It’s more important that the person be able to speak to your experience doing stuff than that they have a specific title tho, imo. A detailed letter from a visiting prof is better than a nonspecific one from a core faculty.
