So is it too early to study for the MCAT if you have not completed the required coursework for med school? Or is it something that may be worth my while to learn with as I go along (that seems hard to do)?

Unless you are one of those supermotivated people who can learn the stuff on their own, I wouldn't recommend it. Even with the required coursework done it is still a bit of a struggle. The coursework will go much more in depth than the MCAT giving you a nice way to understand the abbreviated MCAT material.
