As the title suggests, do medical schools need to/would really like to see that an applicant has taken multiple upper level sciences? Because I'd much rather avoid takings my major classes such as genetics/molecular biology/microbiology during my senior year(after applying). Will this put me at a disadvantage?

Some schools have requirements for certain upper level classes, but those are usually prior to matriculation. Unless you've done badly in all your science classes and are trying to prove that you can handle a rigorous science course load OR you're applying to schools that require classes like these prior to applying, when you take these classes should not matter.
