Might be a dumb question, but if anyone with any experience knows anything, how much volunteering does one need to do if they have a job? If I wait till the last minute to do some, or not do any at all, would that look bad and decrease my chances of getting accepted anywhere?

if you have the opportunity to do some, you should do some
 
I did about 3-4 hours per week during the few years I was working full-time. It was totally manageable and interviewers only said good things about my volunteer work.

And yes, you want some volunteerism on your resume; ideally you would have both clinical and non-clinical.
