I took non degree grad coursework this term and am thinking of taking non-degree classes next semester as well. My main reason for doing so is because a) I'm interested in these courses and want to explore, b) I miss school, and c) I can transfer them into a Masters in case I decide to do a dual degree with MD.

Will medical schools question why I'm spending money on random non-degree courses seemingly unrelated to core medicine? Instead of taking all these courses at one university, I want to take a few at University A and some at University B based on what I'm interested in. Is it a red flag to be jumping around like this?
Not a bit. Intellectual curiosity and well-rounded interests are qualities that medical schools value.

It is a common pre-ed delusion that everything you do has to be science or medicine related. Let's try to break this notion right now.

In fact, the humanistic domains are 5/6ths of the REQUIRED competencies you need to be a medical student and resident. Hence, we want want applicants who are real human beings, not lab rats.

Do you think it will be okay if I take these non-degree classes at different universities instead of at the same one? For instance, I took some courses this term at a university in NJ but am thinking of taking some others next spring at a university in FL. I know it will be a lot of transcripts, so if its preferable to take all non degree courses at one place, I will try to do so.
Doesn't matter. Adcoms have to deal with so much worse.

That's a relief! I was worried adcoms would think I was not focused enough on medical school 🙄

According to the wise @gonnif, only Einstein seems to care that you don't take all your classes at one school.
