Hello, if you submit with a planned MCAT date but end up postponing your mcat, what happens/what can you do?

Submitting it on your med school application? If that's what you're asking, I don't think that should be an issue because you still have to send a score in and the application will automatically update the score for the school regardless of whatever date you actually take it. The only thing that could happen is they may ask you why you postponed it during an interview or something but they won't look down on you for it. They just want to know why.
