Hey guys! Am I setting myself up for failure by applying without any LOR from a DO? 2/8 letters are from MDs.

No. It helps but it's not mandatory unless the school you're applying to explicitly says so. Plenty of people have got in with an MD letter.

Why make it harder or leave it up to chance? At some schools a DO letter IS necessary. Just shadow a DO for a day and get a letter. It is necessary at some schools and will only help you at the others.

I definitely don't think a letter from shadowing a DO for "a day" will be of substance.
That's what I did! Shadowed one day, got my letter and went on with my app. I got 10 II's so it obviously was fine [emoji6]
