8 LOR but none are from a DO..big problem?

No. It helps but it's not mandatory unless the school you're applying to explicitly says so. Plenty of people have got in with an MD letter.

Well technically i have a committee letter, that includes 8 letters with an evaluation from my current institution at the end.

Why make it harder or leave it up to chance? At some schools a DO letter IS necessary. Just shadow a DO for a day and get a letter. It is necessary at some schools and will only help you at the others.

I definitely don't think a letter from shadowing a DO for "a day" will be of substance.

That's what I did! Shadowed one day, got my letter and went on with my app. I got 10 II's so it obviously was fine
