I tried looking this up to see if anyone had a similar issue, but couldn't get a definite answer, so here goes...

I'm thinking about taking a class with a certain professor and getting a letter of recommendation from him. The class is an upper-division course offered from my biology major department and is listed on their website (with biology in the title and everything). However, the professor is officially a member of the psychology department. He is also a member of the "Neuroscience Institute" at my university (sort of all the neuroscience faculty combined), and his research revolves around 'behavioral neuroscience', and looks very lab-based.

So the question, would a letter from this professor count as "science"? I might just be overly nitpicky over the issue, but want to be sure.

Mine did - but I would take that with a grain of salt. Each school will be different with regard to how flexible they are about letters. I just rolled with what I had, which was certainly taking a risk - but just because somehow it worked for me doesn't mean it would for everyone. Luck!
