About applying early and acceptance letters

Is there a specific month when schools start sending out acceptance letters?

My worry is this: I apply early, receive interviews early, get acceptance letters early, and because each school will ask you to respond within x days, I might be in a situation where I accept an offer to my 3rd choice even before receiving interview offers from my 1st choice.
 
When you get early offers you have a few weeks to decide. If you have money to waste like some of my friends, they just deposit their money to the schools to hold a seat. It's non-refundable but to them they are willing to use it to see what other schools they get into.
 
The schools all agree that no one will send out acceptance letters until December 1st. And yes, what you are describing can be a problem, but remember that if you really want to, you can put down a deposit to hold your seat, and then drop it later - but don't wait too long since you're taking an extra spot from someone else then, who could very well be in the same situation as you.

And yes, some schools do very late interviews, I had an interview from Loma Linda in March (which happens to be my number one choice).
