I am an incoming sophomore who is fluent in English and Polish. However, I would really love to one day become fluent in Spanish as well. I was wondering how much additional languages are weighed in the admissions process to med school?

I don't think it's much of an advantage in the admissions process, unless you're fluent in 5 languages or something. It may set you apart from other candidates, but only slightly. The only real advantage to learning Spanish is that you will probably get to use it, depending on where you live. 🙂

I don't think it matters much where you live anymore, you'll be able to use spanish in the medical field.

I agree with this.

As to how helpful Spanish will be in the medical school application process, not all that much. Think of it as a single EC.

It's like an extra EC. Being able to speak multiple ECs is probably unusual and may make your app stand out depending on the adcom reading your stuff.....
