I know that some people say to write about non-academic things for your adversity essay, so here my idea: talking about my back pain and how this caused me to miss some classes and how I overcame it. I learned when to lean on others for help (i.e friends helping with class notes) when I recognized my own limits, etc. Also learned the value of support systems.

This is a very early draft/brainstorm, but I would like to know your opinions on this.

It might help to be more specific about how it affected your day-to-day and what you actually changed in response, rather than keeping it too general. Otherwise it can sometimes read a bit like a “support system” angle since that’s a common theme in adversity essays. Overall though, it seems like a good starting point.
