I didn't realize this was even mentioned for Albert Einstein. I had 2 science letters, both from chemistry (which was my major), and I got an interview. If you can add a letter, I would just in case, but at least from my experience it wasn't a problem.

I think you'd be fine with having 2 LOR from the Chemistry department. Albert Einstein lists that as a preference but not having LOR from two different departments probably wouldn't prevent you from getting an interview invite.
