In the courses taken section should we list the classes we will take in spring 2007 or just what we will take in the fall? Fall classes appear on the transcript but spring classes won't since we haven't registered for them yet.

No, unless you want to give a school an update.

You eventually have to submit transcripts for all coursework only to the school where you matriculate.
