Any insight into interview timelines?

How likely is it for me to still get interviews at school I haven't heard from in months? My application was complete for a lot of schools in late July. I got a few interviews already, but not really from my top choices and I know other people with later applications have been getting interviews there
Do schools really process applications in chronological order and put rejected ones in a pile, or do they place some on "hold"? I know these are silly questions, but if anyone can satisfy my curiosity, I'd be really grateful!

Depends on the school. Last year, I know Ohio State and Oklahoma only had 3-4 interviews with the last one being like the first week of November I think. Roseman did interviews till at least March. Indiana did most of their out of state interviews from Jan-Feb.
