Several reasons: 1. As an undergrad, I found it helpful to see other professors (online) explain the same concept in different ways. Same might be true in medical school. 2. I hear that the most difficult thing about medical school is having to learn so much all at once. Taking classes in advance will help thin down the load. etc.

You can see Dr. Najeeb's lectures online for Physiology. Part of the problem is the yield of your method is quite low. If you're truly interested in learning things by video though, the Kaplan Videos for USMLE Step 1 are probably your best bet.
 
Yea, if you're going to prestudy might as well focus on step I material. The important info varies too much by specific school to be that useful otherwise.
