I'm about to send in my application but I have one more issue that I'd like to clear up... When I add a school to send my application to, I am provided with a menu of degree area(s), in which I may check one or more options. Is my selection here binding? So far I've just put structural biology because that is what I'm trained in, but I am also interested in other areas such as molecular bio and biophysics. What exactly is determined by my selection in this menu?

It is not binding. It just shows the university where your interests lie. It is also helpful when you pick faculty to meet with during your interviews.

If it is used at all, it is used to help pick which faculty members will be interviewing you so that they can "recruit" you since you are presumably interested in their department.
