Applying Before Retake

I just did some research and saw that you can submit your Primary AMCAS before you have your MCAT scores. I will be retaking my MCAT later this month, so I already have a score. If I were to apply before receiving my new scores, would medical schools see my old scores by default or do I choose whether or not they see the old scores?

All scores after 2003 are visible. You can indicate that a retake in in progress. It might be wise to apply to one (throwaway) school and add the real schools when you have received your score.
 
They see every score, expired or not. You can't hide them or pick and choose.

Apply with the best possible app.

What's the advantage of doing that? Just making sure that I can get verified almost immediately?

The longest delay in application is at AMCAS. They will be working through your transcript verification at the same time you are waiting for your MCAT results. Once verified, it only takes a day or two to send your primary to designated schools (that you decide after seeing your score). If you wait to send in your AMCAS application until after your get your MCAT results, you suffer a needless delay.

Oh, alright. Awesome! I guess I will do that then and just wait until I receive my new MCAT scores before applying to the schools I actually would want to go to. Thanks for the information!
