If I were to submit information to some universities and not others about my personal life experiences could I be confident that information would not be spread around to other universities?

Yes, no school can see another school’s secondary essays.
The secondaries are directly communicated (sent) from you to the individual school and are not handled via AMCAS as a middleman.

Ain’t nobody got time for that, they are busy attending to the applications to their own school

We are continually reminded that information in the entire application is confidential and not to be discussed outside of the committee meetings. There should be no reason why someone with access to your secondary would speak to someone about what it contained outside of a conversation about the admission process with someone who had responsibilities in that realm.
