As a part of shadowing, I did chairside assisting along other things. Should I list it as shadowing?

In addition to watching/shadowing, I did a lot of chair-side assisting, sterilizing instruments, interacting with the patients and office task (all without pay). Since I did not get paid, do list it separately as volunteering or do I list all of it as a part of shadowing? If I need to list into different categories, how do I break down hours? After the first two weeks of shadowing, I've been doing mostly physical task instead of plain shadowing. Thank you in advance for your help.
 
What state are you in? I'm asking because laws regarding dental assisting vary per state.

Dental Assisting Job Titles and Requirements for Each Level
Unregistered Dental Assistant
A unregistered dental assistant in the state of New Jersey may perform basic supportive dental procedures specified by the state dental practice act under the direct supervision of a licensed dentist.

There are no education or training requirements for this level of dental assisting.
 
Perfect. Just wanted to make sure because as you know some states require mandatory licensing. I'd list it as volunteering because you weren't paid yet you did more than shadow. List the shadowing hours from the 2 weeks separately if you want.
