At my clinic, we have cameras installed in the therapy rooms so that we can record sessions and burn DVDs of them. However, the sound is a little weak at times and I have to bring my laptop to supervision to play clips for my supervisor.

What other methods have you used for recording sessions? Is there some way to digitally record the audio on an ipod (or similar device) so that I store the sessions on my computer, but still select clips to play from the ipod in supervision? Any recommendations?

While I don't have any experience with cameras in a clinical setting, I have done my share of video recording. You might be fine with a basic (i.e., cheap) microphone. Depends on the camera--some have inputs for mini-jacks, and some don't. Most built-in mics are weak; you'd be better served plugging in a mic and placing it nearby.

If you want to digitally record onto an iPod anyway, there are several devices available that will do this. Check this one out.

Still, if you have separate audio and video, you'll have a hell of a time syncing them up.

Do an online search for "digital audio recorders." They're small, and files are easily downloaded onto the computer so that you can burn them to a disc for your supervisor. I've used Sony and Olympus recorders in the past, and both have worked well.

Make sure to check with your school's/clinic's policy re: recording (audio and/or visual) and confidentiality. Some places state they will only use their own equipment, that they are responsible for the materials (regardless of recorded format) safe-keeping, number of copies allowed, destruction at the end of therapy/training/use, etc.
