If I submit my application as early as possible with the only thing being the MCAT, which I would take in August, would that still be too late for a good chance at acceptance?
The reason I ask is because I want to take the MCAT in august because that would give me all summer to study and follow SN2ed's schedule, however if I do this next summer after my junior year and my scores come in too late for an acceptance I would have to figure out something to do for a year after college until the next application cycle comes. I would either have to find a job and start paying off student loans in that period of time, or I would have to go into deeper student loan debt and take a post-bac program.

If you have a year and two months to study for the MCAT I would definitely do it earlier than August. You can really just go at your own pace for the year then really pour it on with 2 months or so left. If you have the chance to submit early I definitely would... Personally, I think it would be foolish for you to wait until August when you still have a year plus to go. If you want to write it after the spring semester, May or early June would be ideal.
Not necessarily. I studied in the year, got a 3.96 gpa, and took the test in May, ended up with a 38Q. It is possible with the right mindset.
