Best Beefing up ECs for Canadian hopeful

Hi guys, I have about a semester left before I'm applying and so far I've got
~100 hours helping a research lab
~100 hours volunteering at a rehab hospital
~30 hours looking after people with disabilities (7 years ago though)

I recently decided to go to US med schools and I know they're very EC centered so what can I do in a semester to beef up my ECs as much as possible? I'm taking the semester off to rewrite the MCAT so I'll be not too busy.

My current plan is to apply to volunteer in another hospital or a community thing but I can't think of much else right now. Any suggestions welcome. Thanks.

Illegal in Canada as otherwise I'd have for sure done it as it's way more interesting than just doing slave labour for labs and hospitals.
