I have no biochemistry experience. I completed both organic chemistries, but would talking biochem now be useful? I've already graduated but this is an undergrad course at my alma mater.

Yes, exposure to biochemistry will be beneficial for medical school (and for students who have not graduated, for other science courses that may be required for your major). It will also help on the MCAT.
If none of the schools you are interested in require it, then don't. I didn't and it's working out fine. If you have a couple schools you want to get accepted at that do require it you can always wait until the spring semester - if you have an interview/invite by then you can take the course in the spring. If that school isn't going to accept you anyhow you can not bother. That's what I'm doing with linear algebra for one of my programs. All the requirements are pre-matriculation.
