Does anyone have a list of all the proteins we have to know and their functions? I always get these type of questions wrong.

Off the top of my head, you should know blood/blood clotting, digestive (esp. SI and stomach as well as main exocrine), and (possibly) renin-angiotensin system. Past that a lot of need-to-know chemicals are part of the endocrine system (hormonal).
This list is good. Someday someone should make a master list.

The 2009 ADA also asks about clathrin and dynein IIRC, which I never encountered anywhere else.

clathrin showed up on my test. I only knew the answer to that because I did some research on it that I had to present last year.

OP guess you should include membrane protein/vesicle formation proteins as well then.
