can I avoid getting a pre-med committee letter from my undergrad?

It's been almost 10 years since I graduated from undergrad. On the other hand, I finished graduate school ( health-related with lots biomedical courses) about two years ago.

If anything, my grad school faculty knows more about my potential and readiness for medical school than anyone back at my undergrad.

Will med schools accept pre-med committee letters written by grad school faculty? Will it matter as to who wrote them?

How much of a red-flag is it if you don't provide a committee letter from an undergrad?

Different schools have different rules, but I think most of the secondaries I filled out also have options for graduate students. Check with the individual websites, and if not explicitly stated, contact the offices and ask.

I also finished undergrad several years ago and went to grad school. I too feel that my grad school faculty knows me more. What I did was I used the health professions office at my grad school. All of my recommendation letters submitted to them came from grad professors and current employers. It worked out fine for me. I have a couple of interviews so far. As far as it comes from the committee, if this is a possibility for you, they really won't ask many questions. Also, I spoke with a few ADCOMS and they advised that individual letters from grad professors would be ok.
