Can I just take a year off before matriculating?

if you get accepted in october, you get almosta year off to do nothing ify ou want
 
You can defer matriculation for a year, but only some medical schools allow you to do so.

AFAIK, deferrals are only granted in exceptional circumstances. e.g major scholarship (Rhodes, Marshall, ...), finishing the last year of a degree program/work/military contract, etc.

Wanting to "chill" is not good enough of a reason, I'm afraid.

I think it depends on the school. I had a friend defer for a year, so he could volunteer.
 
Some schools if they overaccept students will actually pay you to defer =O
