Can I list this as shadowing?

So I worked as a dental assistant last summer, but whenever I wasn't sterilizing tools or setting up/cleaning chairs, I observed the dentist do procedures. Can I categorize this experience under "dental shadowing" and then select "compensated" for recognition. My description describes my duties for the job but also describes the procedures I got to watch and what I learned from the experience. I know some schools count assisting and shadowing as two different things, but would it be better to list it under shadowing for the schools that count it and then the ones that don't just wouldn't count it once they see the description?
 
TBH I would mention them as both. Many schools won't literally count the hours and dissect which ones are for "shadowing" and which ones are for "assisting." All they care about is you getting enough dental exposure to understand what the profession is about.
