Is there any way to retrieve a letter submitted to AMCAS or schools??

... in order to read them? No. Perhaps AMCAS might be willing to relay them to your Interfolio account online (though I doubt it). Call AMCAS and see what they'll do for you.

Oh, gotcha. Depends, are you verified? If not you can simply change which letters you designate to each school. If you are verified then I suppose you might be able to email AMCAS to do a post-submission change but I'm not sure if they'll comply (I would guess so). If you are already on the secondary application stage you might have to call schools independently and update them of the change.
