No MME LORs?

I will be applying this upcoming cycle as a nontraditional career changer. Out of my three most meaningful experiences, my first is my job as an engineer at a pharmaceutical company but I cannot get a letter from my boss as I’m not telling my company I am Applying to medical school as they will see that as me eventually leaving which will put me to disadvantage for future promotions, and I would like to keep the job for the income throughout my application cycle.

My next activity is as a hospice companion volunteer, I considered asking my supervisor for a letter, but I do not work directly with her and go to visit patients on my own, I just send her a log of my time and activities.

My third activity is as a volunteer at a recovery center where I interact with all different types of people and have been exposed to the social determinants of health. The supervision turnover here is high and I briefly interact with the staff when signing in and out of my shift, but I think this would be more of a generic letter.

I have one science and one non science letter secured. The other science professor is currently not responding to any of my emails, but agreed to write a letter a few months ago (advice on this too would be appreciated lol). Is it a red flag if I just stick With these three letters and don’t get one from a MME? TIA!
I don't think you need one from an MME per say. Are there any staff members below the supervisor level that you interact with regularly, but who are still in authority?

You absolutely do not need letters from your most impactful experiences. Many schools look for a committee letter from your school or letters from three faculty members, two in the sciences (because you've taken courses in bio, chem & physics, and maybe math) and one in the non-sciences. Some people will substitute a letter from a coach or supervisor but it is not required.
