Absolutely - it is all about what you learn about the field of medicine, medical team dynamics, physician-patient communication, etc as you observe. It is important that potential providers see the process - the good and the bad - everything from life-saving diagnoses, exceptionally grateful patients, to "difficult" patients, to EMR requirements to insurance denials of specific medications and testing. This is the same whether the provider is MD or DO. Ideally, you will have at least one in-depth shadowing opportunity, where you really get to know the provider and vice versa. You will get comfortable enough to ask a few questions, etc. I really enjoy it when I have UG's shadow me and especially value the time once I get to know the students. Generally best to keep each individual shadow session to no longer than 3 hours though - be explicit ahead of time with the provider!
