can Mental health first aid 1-day course be part of “Continuing Education Courses” section of application

Why not? If it was from a reputable place it couldn't hurt to include. I threw in some First Aid/CPR/EMT and a few other topic certification and stuff. I am sure it wasn't a deciding factor getting me in but I figured it showed some additional interest in improving myself.
