Actually I believe that once you're finished with your training on a J-1 visa, you're required to go back to your COUNTRY OF RESIDENCE before you started residency. I.e. Unless you were Canadian, going to work in Canada probably won't fulfill the 2-year away requirement for J-1. I'm sure people have tried to get around it legally or illegally, but you better make sure.
