It gives schools the impression that you've more important things to do with your time then interview with them. If I were on a committee I'd think you were interviewing at another school.
but during the interview, cant I explain the situation ? I think volunteering is a good excuse

Even if there are available dates and it's not a problem with the school, I still think it's a significant disadvantage to take a later date. The schools accept on rolling admissions and the more you postpone it, the more competitive it's going to get for the remaining spots.
With that said, If you were a highly competitive applicant expecting multiple interviews and the one you're postponing is not at your top choice school, it's probably not going matter much. If the interview you're thinking of postponing is one of your only shot of getting in this year, I would never risk it. Good luck.
