Yes, you can withdraw by e-mail (include you AMCAS number and identifying details)
No, you don't have to do anything with AMCAS.

I think the bast thing is to talk to the school, and make sure. I think that most will accept an e-mail.

i have withdrawn from all my schools by email.
sometimes some schools will ask you to send a hard copy too, but the email will suffice.

and you do not have to do anything with AMCAS...the schools take of that themselves.
