I have been fortunate to accept a post-doc offer from my top choice. However, I have one post-doc interview remaining with my current internship site. Any tips on the best way to share with them that I no longer need the interview (without saying it quite like that).

Thanks in advance!!

Not a big deal. Just shoot them an email saying you have accepted another offer and need to withdraw your application. Thank them. Don't be weird the next time you see them in-person. You can have the conversation in-person too if you have a good rapport with the individual and see them regularly - I just prefer email for this just because: A) They'll probably want it in writing eventually anyways; and B) You can play it off as you "just found out and didn't want to wait til the next time we saw each other" which makes it seem like you are watching out for them.

This happens all the time so unless you were literally going to be their first post-doc, chances are they've had this happen before.
