challenge secondary essay advice

I'm currently pre-writing my challenge essay whose prompt goes something like "mention a challenge you overcame and how did you manage it/what did you learn". However, I am fortunate enough to not have experienced any significantly negative life events/loss/addiction etc. I have two ideas in mind:

1. I'm an ER tech (started in 1st summer of undergrad) and had lots of trouble with IVs when I first started. I improved quite slowly (initially questioned fitness for medicine, etc) but eventually got the hang of it and learned a competency in ultrasound peripheral IV guidance as well, allowing me to better help the nurses for hard sticks. Could expand the topic to skills I use in that job in general.

2. Communicating with those who do not speak English in a healthcare environment, specifically at the ER. I had to revisit my Spanish education (which had largely worn away since high school) through duolingo and spanish guides tailored to healthcare environments. Learning how to use interpreters, think on my feet to communicate in urgent situation, etc.

Are these good topics? too broad/narrow? any feedback would be much appreciated. Thank you.
 
My opinions

1) This is just about ascending the learning curve. I suppose that is a challenge, but it's not one I find compelling.
2) It's like learning to ride a bicycle after a few years away. Is that a challenge?

I'm more interested in a situation where you had to set/reach a goal. You don't have to experience a significant negative life event. You could talk about losing weight, running marathons, becoming more polished as a public speaker (running for elected office), or helping raise $1,000 for a charity.
