Choosing professor for LOR

I asked this question to my advisor and I'm just wondering what you guys think too. Would certain science professors be more preferred to write LoR's depending on what field of study they are in?

For example, would a letter from my organic chemistry professor be more preferred or look better than a letter from a general zoology professor? Or would a letter from a microbiology professor be preferred over a geology professor's letter?
 
My opinion is absolutly it matters. Here at UF when the admissions dean has come to talk to us she mentions that a letter from ______class wouldnt be as valuable as one from the crusty old organic prof. Also if you were to look at school requirements, some schools (like maryland) want a letter from a bio prof and a chem prof. Different schools have different things they want. If you can get them from a main pre professional pre req course where they can compare you in the letter to all other pre dents, meds, etc. thats ideal.
Above all else you want a professor who can write a good letter, obviously preferrably someone you know. So if you know a zoology professor better that micro bio and you think you'll get a much better letter go for this.
