I am simplistic and non-adventurous so I usually stick to the general chocolate chip sort of cookie.

If I'm not mistaken, "soda" and "pop" are both simply abbreviations for "soda pop." In this phrase, "soda" is equivalent of the "chicken" in "chicken dance." A descriptive adjunct, yes, but an adjective always plays second fiddle to a noun.
