Committee Letters & Required Classes

I saw that some school require committee letters if the current university offers such thing but can I still apply with LOR's from different professors?
Same with the required course. Can I still apply without having the required upper level bio courses?

You can apply without pre-requisites as long as you complete them before you start dental school.

As for committee letters, my school offers it but I opted for professor letters. I still got interviews.
