Take as many classes as you think you can handle. If you can only handle 2 in the begining, that's ok. I would try to add another class though as you get used to the science courses. Plus if you are working and going to school, adcoms understand that I realize it is difficult to work and be a full-time student.

course load concerns arent going to be a big detriment to you in the long run anyways so just take the classes you need to take at a reasonable pace and do well in them. why overload yourself and get bad grades...much worse than taking a reasonable amount and getting good grades...obviously...😉
