I know dental schools will not let you defer easily unless you have a very good reason. I was wondering though if dental schools would let you defer a year if you got the Fulbright Scholarship and got accepted to dental school in the same cycle?

Case-by-case basis. There was a dental student at either Iowa, Louisville, or Alabama who deferred an acceptance in order to research abroad in Europe. I'm sure other schools would be as accommodating.

Counting your chickens a little early in the season?

It depends on the school and the case. My friend got a Fullbright and was allowed a deferment from New England. She did have to apply/explain to them though.
