Varsity sports team, 3 grant funded research internships during uni summers, 2 uni club VP roles, long term volunteering role as a big brothers/big sisters mentor, multiple non-clinical paid employment positions. Have worked as a clinical research coordinator since graduating. Hope this helps! Apologies for the lack of info in the original post, didn’t want to overwhelm responders with too much extra content.
How many hours in each activity? The details are important.

Will the number of hours for each activity impact the schools I should or shouldn’t apply to? Here is the hourly breakdown:

CRC job: 4200
Shadowing: 150
Non Clinical Volunteering: 200
Clinical Volunteering: 150
Hobby (painting to fundraise for breast cancer): 1100
Varsity athletics: 1500
Oncology summer research positions (uni summers): 1400
Non oncology summer research position (uni summer): 600
Healthcare App Intern (paid employment): 600
Uni Clubs Leadership: 400
Paid employment (non medical): 1500
Hours and responsibilities are important. I appreciate the hours but need the responsibilities/details of your activities as appropriate (not necessarily identifying).

Are there schools on my list that I should remove based on their history of accepting/not accepting Canadians? For example, UCSF is not listed on any of the “Canadian friendly” lists, although their admissions office confirmed that they technically accept Canadians.

Additionally, are there schools that would seriously consider a Canadian application that I’ve missed?

You could add Wayne State, Michigan State, New York Medical College, TCU, Georgetown, Tulane, U Colorado, U Illinois.
 
Gtown changed rules and doesn’t accept international students as of 2023 ^ :(
 
For example, UCSF is not listed on any of the “Canadian friendly” lists, although their admissions office confirmed that they technically accept Canadians.
They interviewed 3 (of 117) international applicants and matriculated 2 of them.
This would indicate that these were most likely internal candidates.
