Given that no one has answered the question, and because this might be a legitimate question for other community members, I'll at least float an answer.

The general advice is no; retaking those courses solely as a content refresher is not the most effective way to rehash the content. For example, you could cover what you need to know for MCAT + med school much faster (and likely with greater clarity) w/ a free resource such as Khan Academy.

On the flip side, there is an argument to be made about gatekeeper courses such as organic chemistry and physics. Some would say that having recent high grades rather than distant past ones is one avenue to demonstrate that you can perform at or above level with your peers. My counter to this argument is that you can demonstrate parity with your MCAT score, which tests most of those concepts.
 
Long story short, I got A's and B's in general chemistry, calculus, statistics, and organic chemistry. I also earned a P in Organic Chemistry 2 in Spring 2020.

I took most of these classes in 2017-18 and am bad at STEM, so I forgot most of what I learned. Does it make sense to retake them just for content review or is that risky / not worth it?
Absolutely yes.
You'd need those for MCAT, for starters
 
Wait, so, to clarify, you're telling me that I *should* retake Orgo 1 and 2, Gen Chem 1, and Calc/Stats even though I got all A's and B's in those classes from 2017-2018?

What if I were to get a lower grade the second time taking a class lmao
You're the one who said you didn't remember the material. What are you going to do when you study for the mcat?
 
Is this the same person from a month or two ago who claims they are awful at science because they have like a 3.6 GPA and got a B- in Orgo?

As I've stated, I went from thinking I was smart all of my life in K-12 school to suddenly being middle-of-the-pack or just a cut above at my T15-T20 ranked university.

I earned a few B's in high school in geometry, Algebra 2, and chemistry but have never earned a grade as low as a B- prior to college.

I struggled to pull off a 3.56 - 3.6 science GPA whereas my college peers who are in med school at Keck, JH, Harvard, whatever, effortlessly pulled off 3.8-4.0 science GPAs. Those experiences are not easily to emotionally recover from, and moreover, I haven't even finished all of the pre-requisites.
