So currently I work as a dental receptionist at my local clinic, but need shadowing hours badly to rack them up for my application. I was wondering, does this job count as shadowing or volunteer hours? Does admissions like to see that I am a receptionist in general? Can I put this job towards my application in any way?

It doesn’t count as shadowing as you’re not chairside next to the dentist observing. And it’s not volunteer as I’m assuming you’re being paid?
You can use it under employment, but it doesn’t qualify for anything else. See if you can shadow the dentist 1 day a week if you can afford it. You’ll rack up hours quickly

I agree, a job should be employment. We don't mind if you are front office (patient facing).
Ask the dentists in the office for shadowing or observing.
