Do you remember everything that you were taught in dental school? I'm talking about subjects like perio, occlusion, restorative, oral pathology, etc. I feel like it's so hard to memorize every little detail of the classes related to dentistry yet they all seem important.

Absolutely not. You learn it for the exam, and then if you don't use it you lose it. You'll learn what's actually important once you start practicing clinically.

The most important is the clinical thinking, which supposed to develop in dental school.
Later you refer to notes and such when you feel the need or have a challenging case.
You do need to remember at least 2/3 of it though to not run to the book/google every time. Learning basics during practicing is too late
